Today I had a wonderful lunch with my very good friend Gail at Vancouver’s Crave on Main. It was her birthday and we enjoyed catching up in the back patio.
I started out my lunch with the yellow beet soup with goat cheese.
I really liked the soup, it was flavorful with the sweetness of the yellow beets. I would like to try and recreate this soup myself in future, but with some minor adjustments. The waitress was very accommodating to my request to ask the chef what were the ingredients.
She shared with me that the main ingredients for the beet soup were:
- yellow beets
- caramelized onion
- tomato (not sure if tomato paste or just tomato)
- goat cheese
I have a suspicion that it also included some cream. Also, I am not convinced if all the herbs were fresh or not, some may have been dried. If I was to make this soup at home, I would probably replace butter with olive oil, cream with goat yogurt, dried herbs with fresh herbs.
Btw. After my soup I had the pan seared halibut with lemon ricotta gnocchi, asparagus and fresh corn. Probably one of the best halibut dishes I have had – the gnocchi was mighty fine too!
